Gabriela’s Gluten Free Banana Bread

Preheat oven to 350°. Grease and flour two 8.5 x 4.5 x 2.5” bread pans with sorghum flour.

Cream together the following in a medium bowl:

1 cup margarine, butter, or ghee

3/4 cup sugar

Add and beat the following into the margarine/sugar mixture:

3 eggs, beaten

1 tsp. vanilla

Smash 3-4 medium bananas with a fork and add them to the mixture with a few brisk strokes.

In a separate bowl, blend the following:

2 cups sorghum flour

1 cup tapioca flour

3/4 tsp. salt

1 tsp. xanthan gum

2 tsp. flax seed meal or almond meal (optional)

1 1/2 t. baking soda

1 1/2 tsp. ground cinnamon

3/4 tsp. ground cloves

3/4 tsp. nutmeg

 

Gradually mix wet ingredients with dry ingredients with just a few strokes until all four is blended. Pour batter into greased and floured bread pans.

Bake in preheated oven for 45-55 minutes until cooked.
